How do I change the default spell check language in One Note?

This is driving me crazy. Every time it spell checks it corrects me for
writing labour instead of labor or colour instead of color. I have to keep
switching to Canadian spelling for the dictionary. I've changed the default
language, all my Office Settings, everything I can find, but it still will
not spell check in CANADIAN English

I should add, now that I see similar questions, that it does not seem to
change for all my different pages. I change it for one page, and then in the
next it's back to U.S.

My situation is even worse.

I happen to use several languages (mostly English, French, Hebrew), but
naturally always the same ones: the ones I know. Yet I have to go every time
through the routine of selecting these languages from dozens and dozens of
obscure ones.

Why not allow the selection of the subset one is interested in using, as one
does for keyboards. And of course, let us change the default language.

Methink MS does not employ enough multi-language testers
