How do I change the font color when I receive replies?

I have replied to Outlook emails that automatically changed my reply to
another color. I would like to know how to do that. I am looking to send a
survey to my customers, and I would like to have their responses returned to
me in another color. I know it can be done because I have received emails
like that myself. But I just can't figure out that action. Maybe it is in
Outlook 2007. I am using 2003. Thanks!

Tools-Organize-Use Colors....

you can't control the text color a recipient uses in a reply to you.
