How do I change the name display format for my e-mails?

Right now, when I select a person to receive an e-mail
from me, the name is listed in the "To" field like this:

Dan Ramsey([email protected])

I want to change the default setting on my MS Outlook 2003
to where ONLY the name is listed in the "To" field, NOT
that person's e-mail address as well.

Can anyone please tell me how to change this? I'm sure it
must be pretty simple.

Change the Display As: field for that Contact.
