How do I change the sort order of days of the week?

I am planning a conference and want the report I created to list attendees by
the day of the week they are attending and in order of the days of the week
(Sunday, Monday, Tuesday, Wednesday, Thursday, Friday, Saturday) and not
(Thursday, Tuesday, Wednesday).

Include an additional field that has the weekday number value and sort on

Just to be perfectly clear, Rick isn't suggesting adding a numeric weekday
field to your table. There's a built-in Weekday function that you can add to
your query.
