How do I change week view in Calendar to show 7am - 6pm?

Ask in the body. When you say "Week view", do you mean "Work Week" or the
seven-day "Week"? In the latter there's no time scale, so I'm assuming the
former. Click Tools>Options>Calendar Options and set the "Start time" and
"End time" values.
