How do I choose my Outlook stationery each time I send an email?

I know that I could set a template as my stationery default, but I have
several and would like to be able to choose which is used each time I send an
email. Better still would be able to associate templates with particular
email addresses.

Actions-> New Mail Using-> choose from your list of stationery
