I also followed advice from Dale in a previous post and did exactly what was
recommended, however when I view Resource Assignments in the Resource Centre
I'm still getting the list of projects which have been closed even after I
change the booking type to proposed.
How can I get a view here with only the current projects displayed?

2. Click Tools - Build Team from Enterprise
3. Set the Booking value for all of the team members to Proposed and click

The above set of steps will remove the tasks for this project from each team
member's timssheet in PWA. To distinguish closed projects from production
projects in the Project Center views and Portfolio Analyzer views, you might
also ask your Project Server administrator to create a custom enterprise
Project outline code called something like "Project Status" that would
include values like: Planning, Production, Cancelled, On Hold, Closed. To
specify the status of each project, you would then need to complete the
following steps:
1. Open a project
2. Click Project - Project Information
3. Set the Project Status value for that project and click OK
4. Click Collaborate - Publish - Project Plan and click OK
