How do I convert Pub 2002 input into pre-press flat layout order?

My printer has told me to submit my 2002 Publisher files in pre-press flat
layout order. I don't see the option to do so. I thought that he could. Some
one told me to ask about a "make book" option. Is that on the commercial
printing software only. Can you send instructions to pass to my printer.
