how do i convert the whole visio document to black and white?

I would like to convert my whole visio network diagram to black and white, so
i can then add single colored icons to highlight different points on the
network.

If all of your diagram shapes are on sinle layers, and you apply a color to
those layes, then their lines can be coloured (eg black), and any fill wil
become white.
Then if your new shapes are on layes which are not coloured, they will be in
their normal colours.
