How do I copy a live system to a test system ?

We have a 3 server production system that we want to copy to a 3 server test
system. Does anyone have procedures on doing this?

I can do the install and move the databases over etc. , but what about the
refenrces to the server names within the databases themselves? We could go
manually edit all the tables but that seems highly risky.

Any thoughts?
