How do I copy a person's Outlook contact information into an email? I don't
see any feature that allows me to copy the contact information and paste it
into an email to share.

You create a new data file, copy contact info to that, close the data file &
mail it
Or export in a suitable format & mail that result

In OL2007 you can right click on a contact and choose "Send as Business
Card" which should send the contact as a vCard file. vCards are usable by
many programs now.

if you use the address card view and need to include their address, just
select the card, ciopy and paste as text (paste into notepad, copy and paste
into the message - if you need to do this often, get puretext.exe)

What happens when you drag the contact record into the new-mail compose
window?
