How do I correct a word without having it cut into my essay?

I cant correct my text without having to rewrite the whole sentance! I have
stopped the auto text format yet it still happens!

I suspect that your issue is that you've inadvertently pressed the Insert
button and toggled from Insert into Overtype mode (if so, OVR on the status
bar will be dark). Press Insert again to toggle back.
