How do I create a "From" field while the command doesn't exist

I have several email addresses and I would like to be able to chose the one I
want, easily by clicking on a "From" field which would be similar to a CC or
Bcc field.
My Outlook is a 2000 version and it doesn't display any "From" command from
the View/toolbar/customize/commands menu.
Thanks for your help.
