How do I disable Office updates from changing the default email?

When we get Office 2003 updates from our WSUS it resets the default email
client to Outlook, even though we have set it to use Outlook Express or
Mozilla Thunderbird as the default. It is nice to get the updates installed
on the computers, but a real pain to have to switch everyone's email client
back to what we want them to use. Does anyone know how to stop Outlook from
being a "Big-Bully" and taking over the default everytime we get an update.
