how do I display multiple documents

Before my office changed computers I used to be able to put all my documents
on the Word screen so I could jump between them easily. Now they all display
on the task bar in a huge row. How do I get them back on the Word screen?

Right-click in the Taskbar and select Cascade.

On the View tab of Tools | Options, check the box for "Windows in Taskbar."

Specifically it is under Tools, Options, View tab and in the top right-hand
corner of the View dialog.
