How do I get it to adjust for completed tasks?

Enter the actual finish date for the task.

If it is done today, then set today as the actual finish.

that did it -- except the task completed was part way down a list of
tasks and it then adjusted everything following to start today - even
though 2 preceeding tasks are not done.

My situation is that I have
Main task
+ sub task 1
+ + task 1
+ + task 2
+ + task 3
+ + task 4
+ + task 5
+ sub task 2

I have just set each to have the previous as a predecessor as I can't
figure out how to tell it to just allocate days where each resource
can only work 8 hours/day.

When I mark task 4 finished yesterday, but tasks 1, 2, & 3 still need
work, it starts task 5 today and sub task 2 tomorrow. Do I need to
re-do the predecessors when a task is completed prior to the ones
before it?

Hi,

You shouldn't set predecessors that aren't any: as you have discovered, that
creates tons of work during tracking.
You assign the resoreuce(s) to the task then use ResourceLeveling, which
will ensure resoruces aren't laoded more thatn the working hours.
