How do I locate all "to" fields equal to a particular address?

If I do a search for all emails with (for example) "@ljh.com.au" in the "To"
field, the resultant search will not give me those emails that have a Display
Name listed, even if the address does have "@ljh.com.au" in the "To" address.

eg if an email was sent to Display Name of "Joe Bloggs" with email address
"(e-mail address removed)", a search for all "to" addresses containing
"@ljh.com.au" will not yield this email. (Try it!!)

Which To field are you using? Do an advanced search and use the To field on
the first tab, not the To field on advanced.
