I would like to add our company's logo colour to the font colour palette in
Word 2002 so that it is available every time I open Word? Does anyone know
how to do this? Thanks!

There is no way to do this. But you can save the custom color as part of a
character style that can be applied to text. You can assign a keyboard
shortcut or toolbar button to this style.

You can't do that literally; the palette is not changeable.

You can define a character style based on the "Default Paragraph Font" that
defines the custom font color (and nothing else). Apply that style wherever
you want to use the custom color. You can also assign a keyboard shortcut or
toolbar button to make it easy to apply the style to selected text.
