How do I prevent the punctuation I use in my email from changing?

I sent a message using some punctuation, such as " to represent inches. When
the recipient replied to me, some of the punctuation that had been used as
symbols had changed to strange characters. Is there a way to prevent this
from happening? Thanks for any feedback.
