How do I put "&" in the footer?

Version: 2008
Operating System: Mac OS X 10.5 (Leopard)

When I type "&" the and symbol into the footer, it deletes it. When I double click on the footer it is there, but it disappears as soon as I click the footer close. When I go to print preview, it doesn't show. I assume it sees it as a formula. For example, I would like the footer to be Green Health & Rehabilitation Center.

Apparently XL08 Help dropped the section on formatting headers and
footers (at least I can't find it).

Ampersands in XL footers are escape characters. To print an ampersand
you need to use two of them:

Green Health && Rehabilitation Center
