how do I recategorize contacts in Outlook 2003

I have a bunch of contacts - several hundred - that are categorized a million
ways... I've changed jobs and would like to consolidate the category labels.
During the category consolidation, I would like to rename the labels. An
example would be moving from: Personal, Local, Company X,Y,Z, Family,
Friends, etc ... and consolidating all those categories down to: Holiday
Cards.

I haven't found a way to complete the task without opening each and every
contact to manually change the categories assigned. Thoughts? Solutions?

You can select multiple people and Categorise -

Use Crtl click, then once they are selected, right mouse click, Categories
and set what you want these Contacts to be.
