How do I replace 1 character with another in field code results?

I have a Word document that has Code39 bar codes on it. These bar codes are
actually mergefields that are formatted to the bar code font. The results for
this field may contain spaces between the strings of text. These spaces do
not automatically translate to a space in the barcode. The spaces must be
replaced with "!" which the bar code will then translate to a space which is
then scannable by our equipment. I cannot insert the "!" into the data source
itself. It must be done when the document is generated. How can I accomplish
this? How do I replace 1 character with another in the field code results?

Please note that I am using Word 2002 on the XP platform.

If this is a mail merge, the "field results" are already plain text (not
fields).

Thank you for your response. The document is automatically generated by an
inventory tracking system. It is generated using a Word template. During the
course of normal operation many, many such documents are produced. Far too
many to do a Find and Replace on each of them. So I'm trying to resolve this
problem on the template so that the document will be generated with the
corrected bar code. On the template the bar code it is still a field. No text
to find and replace.

The document is generated by an inventory tracking system. It is generated
using a Word template. I am trying to apply this solution to the template so
that the document will be generated with the corrected bar code when ever the
system creates it. On the template the bar code it is still a field.
