How do I schedule appointments for others?

I schedule appointments for others in my office. When doing so, I want to
receive a response or acceptance to verify they received the appointment. I
do not want to include myself in the appointment. The only way I've been
able to do this is to "invite" the others, but that puts the appointment on
my calendar, too.
