How do I see mail addresses in the sent to and inbox emails ?

I want to see the email address for the items in the sent items and inbox
folder when viewing these lists. How does one set this up so they can be
viewed before openning up the email?

Right-click on the header column, and use Field Chooser to add whatever
field you want to your view in that folder. Look at the category of
e-mail address fields.
