how do i set up a diary on my desk top

Of the many ways, the one that suits you best.
You could use OneNote, Word
You could write the diary on paper and scan into a program like Acrobat,
Omnipage etc which allows you to add the scan image to an existing file.
You could Google for - Journal Software - for programs designed for
maintaining a journal.
