How do I set up a letter that changes text automatically in Word

I will be composing the same letter to people, but with different name,
address, for each letter. I want to make the Dear _______ change according
to whatever name I put in the address section of the letter. I know there is
a way to do this because I did it about 13 years ago right after I had taken
a Word class, but I cannot remember how to do it.
