how do i set up a spreadsheet for reservations?

I was recently hired to run a motel- the reservation system isn't
computerized, and the owners do not wish to invest a large amount of money in
a reservation program. How do I set up a spreadsheet foe motel reservations
that will allow me to gather data from each field at the end of the month?
