how do i set up automatic numbering?

I accidentely turned off the Automatic Numbering in OneNote and can't seem to
figure out how to start it again. When using bullets automatically there is
a little autocorrect box that appears when i start a bulleted list and on it
there is an option to turn of automatic lists. there you can click it on and
off, but since i did that on Numbering lists i can't get that box to turn it
back on again.

I agree, the way to turn it back on is pretty hidden! Go to Tools-->
Options, the Edit section. There you will see check boxes for turning
automatic numbering back on and automatic bullets back on too (in case that
one went away as well.) These are the last two check boxes on that screen.
(There are other options there, but not check boxes.)
