Tasks may be split.
Right click on the Gantt bar and release the mouse.
Select "Split Task" from the context menu, the cursor will change shape.
Click on the Gantt bar at the date you want the split, drag to the right.

Is this what you needed?

While a task may be interupted, shown by a split as Jim suggests, what
you're describing may actually be a series of separate tasks instead of the
same task starting and stopping. A task is a discrete block of work
resulting in a single deliverable. If you have to paint a room and for some
reason are doing the north wall this week and then have a couple of week's
wait before you do the south wall, that's really two separate tasks and each
is scheduled independently. You would enter "Paint The Room" as a summary
and indent "Paint Wall 1" "Wall 2", etc as subtasks under it.

Have you tried the "Roll up Gantt Bar to Summary" option on the General Tab
of the Task Information dialogue box of the tasks you want to show on a
single line - if you employ this and play around with the bar style for
summary bars in the Bar Styles dialogue box so that they don't display this
may address your requirement. I have experimented and this works but may not
be exactly what you are looking for.

I think what you really want is the Timeline view that will be available in
Project 2010.
