How do I show the hours I'm available in the office?

How do I block out the time on my calendar that I'm not in the office, or
show my working hours? For example, I work from 6:30 until 3:00 so I don't
want to get scheduled for meetings after 3:00?

Also, FWIW, Outlook 2007 + Exchange 2007 will actually show each user's working hours in the Scheduling Assistant.
