How do I subtract??

Am I missing something? Where is the subtract function for Excel? I'm
trying to set up the family budget and can't find out how to enter a
function to find the difference between two numbers (as in money left
over after all the bills are paid). I tried the insub function, but it
only seems to work with specified numbers and I don't want that since
totals may be variable. Even entering 'subtract' in the search
function brought up NOTHING on subtraction (except the insub one). So
please tell me where I'm going wrong and what I'm not seeing!!! i
really feel stupid about this. Thanks!

You're overcomplicating it :)

=A1-A2

Ought to do it. There is no subtraction function.

Or if you want to tally a column/row & deduct something from the total:

=sum(A1:A25)-B23

Substitute the appropriate cell references in your specific case.
