How do I change "--" to an em dash in MS Word?

In Tools > AutoCorrect Options > AutoFormat As You Type, check the box for
"Hyphens (--) with dash(-)". When you're typing, type the two dashes between
words *without* spaces around the dashes. As you press the spacebar after
the second word, AutoFormat will make the change.

If you type a space before and after the dashes, you'll get an en dash
instead of an em dash.

To get an em dash without AutoFormat and its goofy rules, press Ctrl+Shift
and the minus key on the number pad, or hold Alt while you type 0151 on the
number pad. An en dash is Ctrl+numpad minus, or Alt+0150.

Make sure you have a checkmark next to "Replace symbol characters (--) with
symbols (—)" in the "Tools | AutoCorrect | AutoFormat" window.
Alternatively, you can replace it with the ALT-0151 key sequence (i.e., while
holding down the ALT key, type 0151 on your numeric keypad).

Hi,

Try with Ctrl + minus on the numeric side of the keyboard. On my keyboard it
is on the right upper corner of the keyboard.
