How do I reduce the real estate taken by OUtlook"s toolbars and increase the
verticle space available for messages?

Is there a way to selectively disable the toolbars?

View | Toolbars; you can enable or disable any toolbar you want. You can
also drag-and-drop them around, e.g. to combine multiple bars on 1 line.
