How do you alter the column information in the Address Book

I am using Outlook 2000...

I am trying to replace the Business Phone field with Mobile Phone.

This can be done while in the Address Book by right-clicking the field you
would like to change and move the bullet point to the field you would like to
replace it with.

When I do this, I change the "stock" Business Phone to Mobile Phone, but
none of the already-entered mobile phone numbers appear in the column.

When I open each contact and select okay, the mobile phone number will then
appear, but when I exit the Address Book and re-open it, the Mobile Phone
column is blank again.

I would think that a lot of users have changed what appears in the address
book columns, so I must think there is a way to do this...

I would also like to know if there is a way to add more columns since there
is a lot of space when you maximize the Address Book screen...
