How do you change or set a subpage name?

I like the ability to name a page, but can't see a way to change or setup a sub page.

If you're running the SP1 preview, the subpage will inherit the first
text entered on the subpage as the title. To change the title of the
subpage, change the first text entered. Previous to SP1, you cannot add
a name to a subpage.
