How do you insert tables in OneNote?

You cannot insert tables in the current version. You can only use the Tab
key to create a table-like structure which cannot be formatted. This is
useful enough for separating out content but fully formattable tables are a
feature best left in products intended to create finished, polished
documents.

This is however a popular request and it is being considered for the next
version.
