How do you remove the "Emailing" Prefix from the Subject line in Outlook.

Type over it. :)

It's part of the DLL that handles the Sentto. See
http://www.outlook-tips.net/archives/2007/20071221.htm for instructions on
adding your own send to shortcut - it won't add the text.
