How does one change the default font in Visio 2007?

When I start each new flowchart the default font size is 8 pt, which is
absurdly small. How can I change it so that the default size is a more
readable one?

This is a pretty common thread of looking for one place to change it,
unfortunately a lot of the functionality in visio comes from separate
places. For the orgchart you might consider taking the orgchart stencil and
editing the shapes to something more to your liking. (make sure you create a
backup first).
