Does anybody know how many projects can be stored on the Project Server 2003?
At the moment I do have many but just a bit worried it might slow everything
down, when connecting to the server and opening projects up in MS Project
2003.

To answer your original question, storing projects is a function of SQL
Server and you can store as many projects as you have free hard disk
space available.
But opening and working in these projects is different.
You may hate this answer but... "It depends"
It depends on the type of hardware, LAN/WAN connectivity, network
bandwidth, off-loading of Project Server components, etc. So there
cannot be a cookie cutter approach
What I would suggest is downloading and reading the Microsoft Office
