How to add color background to a specific page in multipage Word 2003
document?

I assume you have found out that the background affects all pages in the
document.
One work-around could be create a rectangle from the drawing toolbar, change
to the colour scheme you require, enlarge to fit page, and then Format Layout
to "behind text". Not the best but could give you the results you are after.
This is for 2003 and prior, maybe different for 2007.

this helps. (I use word 2003). How to add and format text (header) inside
that rectangle?

If you've formatted the rectangle as Behind Text, you just type in the
document as you normally would.

They're both the same thing - just in different locations. IOW - it doesn't
matter which one you use.
