How to change "Display As" In Outlook 2000

There used to be an option in Office 97 where you could
change the "Display As" properties of each contact.
However in Office 2000 each conatct shows on the To & CC
fields with "(E-mail)" at the end. How can I modify the
properties to eliminate the "(E-mail)"? Thanks.
