You can change things a couple of ways, depending on what you're wanting to accomplish.
To add/delete personal ones, from inside an Office 2007 app, such as Word, use
Office Button=>Open
go/navigate to a folder you want to add to the Places Bar, then right click the places bar and choose the 'Add...' choice.
To delete some of the 'built-in' items, you'll need to go to the registry
