After doing a google news search as well as a Microsoft knowledgebase
search, I could not find how to customize the category field in the issues
list from it's default of "category1, category2, etc".
After much perusal and wasted time, I discovered it at:
C:\Program Files\Common Files\Microsoft Shared\web server
extensions\60\TEMPLATE\1033\PWA\XML\ONET.XML
Chaning that Schema and doing an IISReset did the trick.
Just posting the solution here so that others won't have to waste as much
time as I did searching for the fix to this problem. If anyone knows of some
other way to fix this besides manually changing the text file above, please
do let me know the preferred Microsoft solution.
