How to change which feilds are displayed in the Global Adderss Lis

I'm using Outlook and Exchange 2003, in Active Directory we wish to poulate
the mobile and otherMobile fields to record the 2 mobile phone numbers each
of our users has, is it possible for this information to be dispalyed under
the Phones tab of a users properties in the Global Address List in outlook
2003. At present only the mobile details are displayed.

Other fields such as Bussiness or Home numbers allow the dispaly of multile
numbers.

Yes, you can use the Exchange System Manager tool to edit the address templates under Recipients / Details Templates. Note that adding more fields will cause users with Cached Exchange mode to make a call to the server to get that additional information.
