How to choose which account when there are multiple accts

I am currently using Outlook 2000 with Win 2000. I have
multiple email accounts with my ISP. I am familiar with
adding new accounts to Outlook. How do I choose and know
which account I am sending email from in Outlook? I have
sent mail from one account(personal) thinking I was
sending from another (professional).
