When you make a .pub document into a .jpg you are basically taking a picture
of the data as it is laid out on the page. It converts the letters,
pictures, etc. into a bit-mapped image file.
The conversion from a bit-mapped image file to a text file isn't as easy.
What you are trying to do can't be done unless you use a different program
(of course you can always insert the .jpg file as an image but it can't be
edited in publisher.) If you want text in a .jpg file you need to use some
type of OCR program to convert the text image into actual letters that can
be imported into a text editor. If you have certain versions of Office you
have Microsoft Document Imaging which will take a .tif image and convert to
text (of course you need to convert the .jpg image to .tif in a photo
editing program first.)
