HOW TO CONVERT TEXT TO TABLE OR NUMBERS IN PUBLISHER 2003

We used an outside consultant to produce a 40 page pricelist in Publisher
2003. This pricelist contains formatted text and pictures.

We now need to change prices by a set % to reflect rising costs and do not
wish to have to change each text item individually each time there is a
future change. Is it possible to this time convert the text used as prices to
a Table or at least to numbers, so that future changes may be made more
easily?

Hoping we don't have to dump publisher and re-enter into another format.
