Entourage doesn't have a traditional plugin architecture (if such a thing
exists), but certain tasks can be automated/customized with AppleScript.

See <http://www.entourage.mvps.org/script/index.html> to begin.

Would also help if you'd say, specifically, what you want to accomplish.

See to begin.

You can't add a menu to Entourage, but you can add an AppleScript to
Entourage's AppleScript menu that can launch just about anything. What
Dashboard (widget) are you trying to open?

Yes, you can assign categories, edit subjects, move messages
around...nearly anything. AppleScript is the way to go. They can be
triggered from the Script menu, via keyboard shortcut, or from Rules or
Schedules.

You might want to see some of the scripts for Entourage that already
exist on scriptbuilders.net as examples of what you can do. Or check the
selection of useful scripts on the Entourage help pages:

<http://www.entourage.mvps.org/script/index.html>
