How to create new "properties" that can be referenced and updated in a doc?

I'm using MS Word 2002 on WinXP.

My documents come with several "implicit" properties that I can
reference in the doc, and later change in the "File->Properties"
dialog, and then cause fields that reference those properties to be
updated in the doc. I'd like to have several other properties like
this that I can reference in the doc and later set and update. I'd
also like to be able to have these properties in a document template
that other people can use.

I've searched the documentation, but it seems to send me off in the
wrong direction.
