How to create snapshots before and after a record has been modifie

Hello.
Does anyone know of a way to audit records that have been updated to show
when (including date and time) a record has been modified in Access 2003?
I have heard of a three table design but don't remember to much about it.
Could you point me in the right direction or could send me some instructions?
